How to Eat Seasonally in Spring: What to Look For at the Market

There’s something truly joyful about eating with the seasons — and spring is when nature begins to wake up and deliver some of its brightest, freshest produce. From tender greens to the first stems of British asparagus, spring is a celebration of new beginnings on the farm and at the market.

What’s In Season This Spring?

Here’s a selection of standout spring crops you’ll find at the markets, many of which are grown by our team or trusted farming partners:

🌿 British Asparagus

A true seasonal star. Our asparagus is hand-harvested and available only for a few short weeks — usually from late April through June. It’s best enjoyed simply: grilled, steamed, or roasted with olive oil and flaky salt.

🥬 Baby Kale from the Betts Family

Delicate, tender, and nutrient-rich, baby kale is perfect in fresh salads or quickly wilted into pasta and grain bowls. Its small leaves make it versatile and quick to prepare.

🌱 Wild Garlic

Often foraged locally or grown by small-scale growers, wild garlic has a pungent, herbaceous flavour that makes it ideal for pesto, butter, or stirring through risottos.

🧅 Spring Onions & Fresh Herbs

These come into their own in spring — perfect for adding freshness to dressings, egg dishes, and salads. We work with several growers who supply beautiful, bunches of chive, parsley, sorrel, and dill.

🥔 New Potatoes

Creamy and nutty in flavour, new-season potatoes are best steamed and tossed with butter, lemon, and herbs. Keep the skins on — that’s where the flavour is.

🥕 Young Carrots, Radishes, and Leafy Greens

Look for smaller, more delicate versions of these familiar crops. Their shorter growing time means they’re tender and sweet, great raw or lightly cooked.
